Spanish-Style Clams

The ocean is an embodiment of wonder. It expands across the world and holds a power that is in essence inexplicable. It's magnetic power attracts and calls each human heart. When visiting the sea, one feels a sense of peace, a sense of beauty and one is inspired. The ocean is alive, it is a force of nature.

The Ocean is home to the strangest yet most beautiful creatures on Earth. It is no wonder that for eons, people have celebrated, worshipped and generated a livelihood from the shores and coasts of the sea.

We feature a Recipe that pays homage to the wonders of the ocean.    

Spanish-Style Clams

Clams were worshipped by the Moche people of ancient Peru because they came from the sea and provided many of the essentials they needed to survive.

Ingredients

1kg clams
125ml olive oil
3 cloves garlic, peeled and chopped
1 small bunch flat leaf parsley, peeled and sliced
2 green Peppers, deseeded and sliced
2 bay leaves
125ml water
250ml dry white wine
3 fresh red chillies, thinly sliced (optional)
15ml salt
 3 onions
Lemon wedges and extra parsley, to garnish

Method

Prepare the clams by soaking them well in water - for 10 to 15 minutes - and then open them one by one and wash them thoroughly. Change the water several times to remove any sand stuck to the clams. ( I usually smell one as I go - if any of the clams are off, you will smell it immediately).

Place all the ingredients except garnish, in a casserole and bring to the boil. Reduce the heat and leave to simmer for approximately 20 minutes. Shake the casserole every now and again to ensure nothing sticks to the bottom.

Serve in a slightly deep plate to accommodate the sauce and garnish with lemon wedges and freshly chopped parsley.
